As I mentioned we just got a new Blackstone Griddle and have been playing around with it, we started with SMASH Burgers, and then did a Mexican Chorizo Taco.
In looking over my recipes, I realized we had made this before and NEVER shared it with you. Time to correct that mistake.
Today we are going to show you TWO ways to make this. One in a frying pan on the stove, another on the Blackstone Griddle.
The first is a Mexican Chorizo Taco with Taters, and scrambled eggs. I like this one just on a plate, but it does make a great Taco.
First, we have to visit our favorite Mexican Grocery Store and stock up.
Groceries in hand, let's head back to the homestead.Here is what you will need.
First of all, some good Mexican Beer
1 Medium Onion (Chopped)
1 ½ lb. of Mexican Chorizo (Chopped into 3-4 " size)2 Potato's (Peeled and chopped)1 Red Pepper (Chopped)3 Eggs
Salt & Pepper
Corn Tortilla
In a pan, add some EVOO and sauté the Chorizo over medium-to-medium high heat.
When done, set aside.
With the left-over drippings, add the Potatoes.
Sauté and add some Salt & PepperAdd the Onions, & Peppers and a dash of salt
(do not stir for three minutes)
Stir then cook until done. Set aside.
Let pan cool a bit then add the eggs, and scramble.
Place Tortilla's in a towel and heat in the Microwave for 30 sec.
If not hot enough heat for another 30 sec.
Place the Chorizo, Eggs, & Potatoes into separate bowls.
Now you can assemble your Taco & enjoy.
Like I said, I prefer it just on a plate.
Or be like Burger King and have it your way.One word of advice. Don't get the extra hot Chorizo. You'll thank me later.
That was really good, but now let's make something similar on the Blackstone.
I did not have a recipe for this. We had some skirt steak that Penny put in a marinade, Chorizo, Onions, and Peppers. (Cubanelles and Poblanos)
Just slice 'em up.
And of course, the Chorizo.Heat your grill on LOW and start cooking.
Start with the Onions and Peppers. Sauté until starting to soften.Add the steak and the Chorizo
Remove from the grill and wipe the surface.
Lay down the Tacos on the grill and cook until just starting to brown.
Flip over and repeat.
Now it's time for some assembly.
This we soooo good, and it was a great test for the Blackstone. Also, for the cook.
